Homemade Peanut Butter Granola

This homemade granola is one of my favorite things to keep in the kitchen. It’s hearty, crunchy, and lightly sweetened with maple syrup. I like that you can switch up the dried fruits, so every batch feels a little new. It works great for breakfast with yogurt, on top of smoothie bowls, or simply as a quick snack straight from the jar. The best part is how easy it is to make. You only need one bowl, one saucepan, and a baking tray. It also makes a great addition to a book club brunch.

Ingredients

Dry Ingredients

  • 500 g rolled oats
  • 100 g walnuts
  • 100 g pecans
  • 100 g hazelnuts
  • 40 g chia seeds
  • 3 g salt
  • 3 g cinnamon

Wet Ingredients

  • 125 g peanut butter
  • 125 g almond butter
  • 125 g coconut oil
  • 175-200 g maple syrup

Add After Baking

  • 75 g dried cranberries

Instructions

  • Preheat oven to 160°C (325°F).
  • In a large bowl, combine oats, walnuts, pecans, hazelnuts, chia seeds , salt, and cinnamon
  • In a small saucepan, melt peanut butter, almond butter, coconut oil, and maple syrup until smooth
  • Pour the wet mixture over the dry ingredients. Stir until everything is evenly coated.
  • Spread the mixture onto 1–2 lined baking trays in an even layer.
  • Bake for 25–30 minutes, stirring once halfway through.
  • Remove from oven and let cool completely. Stir in dried cranberries
